Spicy Long Beans [Waali]
3 Cups long beans – chopped, 1/4 inch wide
1 medium size onion – chopped [ 1/4 ” by 1/4”]
3 hot green chilies – finely chopped
2 medium size garlic cloves – minced
1/2″ cube fresh ginger minced
1/8 teaspoon cumin seeds
1/16 teaspoon [or a pinch of ] Turmeric
1/2 teaspoon Salt
3 Tablespoons vegetable oil
1/4 cup Cilantro – chopped
Heat oil in a pan over medium high heat for a minute or till oil is hot.
Add cumin seeds and as soon as they start to sizzle,
Add onion, garlic, ginger, chilies to the pan and stir fry the contents for two minutes.
Add chopped beans and stir fry for another minute.
Lower the heat to medium, continue to stir fry for another two minutes.
Add salt, stir well.
Half a minutes later add cilantro, stir and mix well.
Turn the heat off.
Goes with: Chapatis, rice & daal.
