Spicy Scrambled Eggs [Bhagara]

8 eggs

1 medium size onion [chopped in small pieces]
1 medium size tomato [chopped]
1 long hot green chili pepper [chopped]
1 Tablespoon Cilantro – chopped [optional]

1/8 teaspoon turmeric
1/8 teaspoon red chili powder
1/8 teaspoon garam masala powder

1/3 cup vegetable oil
1 teaspoon salt

Heat oil in a sauté pan over medium high heat for half a minute or till hot.
Add chopped onion to the pan and stir.
A minute later add tomato and chopped green chili. Stir and mix well.
A minute later add turmeric, red chili powder, garam masala, and salt.
Continue to stir.
A minute later break each egg directly into the pan. Stir and mix.
Repeat this process for each egg. Add one egg at a time.
Make sure to break up lumps/clumps.
Note: Stir and mix after each egg you add to the sauté pan.
Continue to stir fry for 5 minutes.
Cover the pan, cook the ingredients for another two minutes.
You will see oil being released from all sides of the ingredients, that is an indication of scrambled eggs are done. Remove the cover.
Add salt, mix it well with the ingredients.
Turn the heat off.

Add cilantro, stir & mix well.

Serves: 4

Goes well with toasts and Indian fried rice (Fodnicha Bhaat).
