Garlic and Coconut Chutney [Lasan Chutney]

Garlic Chutney:
Garlic Chutney

3 large size garlic cloves – peeled

1/3 cup peanuts
1/4 cup shredded coconut [fresh coconut recommended]

3/4 teaspoon red chili powder [1 teaspoon for extra hot]
1 teaspoon salt [or according to your taste]

Add garlic cloves to the food processor and give 10 to 12 spins.
Add peanuts and run it food processor for about 20 seconds blend. Keep it coarse.
Add red chili powder, salt, followed by coconut.
Blend the ingredients for another 15 to 20 seconds. Keep the mixture coarse.

The entire actual blending process should not take longer than 1 minutes or so.
That will avoid peanuts from releasing its oil and chutney from being very sticky.
Make sure to add coconut in the end, that avoids chutney being oily.

Goes well with all Indian meals, Thalipith, Wada-Paav.
Also use it as sandwich spread.
