Potato Patties [Aaloo Tikki]
4 large Potatoes – boiled and mashed to soft consistency
2 cups Green peas
1 medium Onion – finely chopped
3 hot Green Chilies – finely chopped
2 garlic Cloves – minced
1/2 teaspoon fresh Ginger – minced
1 Tablespoon Cilantro – finely chopped
1/8 teaspoon Turmeric
1/2 teaspoon Garam masala
1 teaspoon Salt
3 Tablespoon Vegetable Oil to prepare stuffing
1/4 cup vegetable oil for pan frying patties
Method: This has three parts.
Part 1: Prepare stuffing
Heat 3 Tablespoon oil over medium high heat for 1 minutes or till hot.
Add onion, garlic, ginger, green chilies to the pan. Stir well.
Add turmeric and garam masala. Stir and mix the ingredients well.
Continue to stir fry these ingredients for another 3 minutes. Stir occasionally
Add peas mix the ingredients well and stir fry them for another minute.
Add salt. Mix it well. Lower the heat to low.
A minute later turn the off.
Make sure that the contents are dry and no water present.
Sprinkle finely chopped coriander and mix the ingredients well.
Set it aside.
Part 2: Prepare patties
Add 2 teaspoon salt to mashed potato, knead and mix well.
Divide mashed potato dough into 12 balls.
Take one ball at a time and hallow it into a small bowl.
Place the stuffing into the bowl shaped portion and close it from the top.
Gently press it to make a patty out of it. Make 12 patties.
Part 3: Pan frying
In a large flat sauté/frying pan add and spread 1/8 cup vegetable oil and make sure the pan surface is covered with oil.
Heat the oil up for 1 minute over medium heat.
Add multiple patties and pan fry one side until that side becomes crispy golden brown.
Flip the patties and pan fry the other side to crisp golden brown side by adding the remaining 1/8 cup oil.
Tip: Use electric griddle to fry multiple potato patties.
Serve with Hot Green Pepper Chutney or Ketchup.
