3 Cups Basmati Rice [or a long grain rice]
2 Cinnamon sticks [each 2 inch long]
12 Whole Cloves
1/2 teaspoon crushed Cardamom Seeds
1 Tablespoon butter
1 teaspoon Salt
Cook rice with water adding cloves, cinnamon sticks, crushed cardamom, butter, and salt.
Simultaneously you can prepare Green Peas for rice.
Rinse rice 2/3 times to remove starch.
That also helps separate rice grains when cooked.
Ingredients For Preparing Peas:
1 1/2 cup fresh Green Peas OR Frozen Green Peas
Rinse frozen green peas using strainer and remove all water.
2 large Onions – sliced [1/4 inch thick]
1 teaspoon minced Garlic
1 teaspoon finely chopped fresh Ginger
1/2 teaspoon Turmeric
1/2 teaspoon Chili Powder
1 teaspoon Garam masala
1 teaspoon salt [Preferably Kosher salt]
1/3 Cup vegetable oil
1 Tablespoon fresh Cilantro – chopped.
Method for Cooking Green Peas:
Heat the oil in a large pan over a medium high heat, for a minute.
Add garlic and ginger and sliced onions, then turmeric to the pan and give a good stir.
Continue to stir fry for 10 minutes or until the onions start to turn light brown.
Add Chill powder, garam masala. Stir for half a minute.
Lower the heat to medium.
Add Green Peas and salt. Stir the ingredients well.
Continue to cook the ingredients for another one minutes.
You will see oil being released from the ingredients in the pan.
Turn off the heat.
Mix Rice with Peas:
Now add cooked rice to the Green Peas mixture.
Sprinkle cilantro and mix it well.
Transfer the prepared rice to a serving bowl / large serving plate.
Serves: 4 to 6
Squeeze small piece of fresh lemon over each serving before eating.
